Richard Mandelbaum is the Executive Chef here at The Academy at Penguin Hall. With a passion for creating delicious cuisine and a preference for using seasonal ingredients, Exec. Chef Mandelbaum brings more than 20 years of culinary excellence to Penguin Hall. Holding a variety of positions in the field, including Executive Chef, Sous Chef, Kitchen Manager and Line Cook, Exec. Chef Mandelbaum’s love for cooking has helped him perfect his culinary techniques at some of Massachusetts’ most popular restaurants.
Before joining Penguin Hall in 2019, Exec. Chef Mandelbaum served as Executive Chef at Guckenheimer — New England BioLabs. In his role there, Exec. Chef Mandelbaum oversaw the purchase, preparation and execution of high-quality breakfast and lunch food service in their cafe. Prior to that, as Executive Chef at both The Landing of Manchester, MA and Sous Chef at Duckworth’s Bistro. Executive Chef Mandelbaum helped develop and run scratch kitchens focused on creating dynamic menus from locally sourced ingredients while managing robust kitchen staffs.
In addition to his extensive experience as an Executive Chef, Chef Mandelbaum has also held Sous Chef, line cook positions and travelled Southern France where he received additional training in French-American culinary techniques.
Chef Mandelbaum knew right after college that creating delicious food would be his permanent career path. When he’s not cooking, you can find him tending to his home’s organic garden or working with students developing the new APH Hydroponic Garden. A lover of soccer and music, Chef Mandelbaum enjoys spending his free time with his lovely wife Hillary and their three young children.
